Healthy Wholewheat Banana Bread (Vegan)

Great even plain, just by itself.

More of a tea-cake, really, this is one delicious recipe that keeps getting made often in my house. 

I would go so far as to say that it joins the list of those traditional snacks, like namak paras, or atta laddus (so rich, but highly desirable!) that are generally kept around the house, especially during exams or vacations.

Made with wholewheat, no refined sugar, nearly half a dozen bananas and just a little bit of jaggery and oil, it easily passes muster for a "healthy snack".
So without wasting any time, here goes –


Dry ingredients – mix these well, sift these together:

2 cups Atta (Whole wheat flour)
2 teaspoons Baking Powder
½ teaspoon Baking Soda

Wet Ingredients– blend all these into an even paste:
2 cups perfectly ripe Bananas, mashed
3 tablespoons Oil (i use organic, cold-pressed, sesame or groundnut)
½ cup Jaggery (use brown sugar as a substitute)
1 teaspoon Vanilla Extract
2 tablespoons Lemon juice
½ teaspoon Salt

Additional ingredients:
1 cup Raisins
1 cup Walnuts (Chopped and lightly toasted)

1. Mix the dry ingredients well and sift them together.
2. Mix the wet ingredients. (I usually grind them all together in the blender.)
3. Combine the two quickly and well. Add in the nuts and raisins.
4. Pour into a greased and floured (or parchment lined) eight by four inch, covered loaf pan.
5. Bake in the centre of a preheated oven at 180 degrees C for an hour. Test for done-ness – bake upto another half an hour, if required.
6. Allow to cool, turn out in five minutes. Slice when completely cooled.

Great with tea, or even just by itself.
